We believe in the beauty of tradition— and work in an old fashioned handshake partnership with our processor and other local family farms to produce the best beef in Georgia. It took us ten years to develop our carefully selected herd.  We use bulls that are in the top 10% of the angus breed when it comes to marbling, ribeye size and docility.   Our momma cows are special too.  Most test in the top 20% for producing calves that are docile, great at putting on the pounds and producing excellent beef with gorgeous marbling and tenderness.

Fill your freezer with fresh cuts, or order bulk with an eighth, quarter, half, or whole cow raised on a local Georgia family ranch! Part of our mission is to work with conscientious ranchers who care about how their cattle is raised and what is put into them.  When you buy from Callidora Ranch, you can rest assured that you will get ethically raised, highly nutritious beef with a quality superior to that of store bought beef.

What is Live, Hanging, and Take Home Weight?


When it comes to beef weights, there are 3 different terms  of which you want to be aware.  “Live” weight refers to what the animal weighed before processing. "Hanging" weight refers to the animal's weight after cleaning and hanging at the processor. "Take-home" weight is the final weight of the meat that each customer will bring home, after 14 -21 days of dry aging. The take-home weight also varies by the cuts you choose and the quantity of bones and fat in the cuts.
Our price per pound is calculated on the hanging weight of the animal.

Dry Aged Angus Bulk Beef


Our ranch-raised beef is processed at an USDA approved on-ranch butcher (abattoir), then it is dry-aged for 14 to 21 days prior to packaging.
Dry-aging our beef allows the natural enzymes to tenderize the meat while dehydration concentrates the meat’s rich, natural flavor – giving you flavor-packed, tender steaks and mouthwatering roasts in every order of Callidora Ranch angus beef.

*The quantity of each cut may vary due to the weight of the animal, the steak thickness you select, and the size of roast you select.

Paying for Your Ranch Beef


When you purchase beef, payment for your beef is due to Callidora Ranch and we require a 50% deposit to secure your beef at the time of order. The final cost for your beef is determined by the hanging weight of your animal. You will receive an invoice either by text or email. 

Final payment for your Georgia bulk beef is due at the time of pick-up or delivery. Your beef will not be released without full payment.

We are proud to offer Free Ranch Pick Up for our Georgia customers. Swing out to the ranch to see us when you pick up your beef! Just order your beef online, or over the phone, as usual and let us know you'd like to plan a Ranch Pick-up. Then, let us know if you'd like to reserve any additional activities– we're here every day! We’ll have your order ready when you arrive. We look forward to having you out to the ranch!

Purchasing Georgia beef in bulk allows you to fill your freezer while paying one low price per pound. We offer eighth beef, quarter beef, half beef, and whole beef packages. You can customize your cuts or select our Starter Package! We do not ship bulk beef orders at this time. All orders must be picked up from our ranch; However, if you are within a 50 mile radius of the ranch, we can deliver directly to you for a fee.

Meet Raul and Genel, the owners and founders of Callidora Ranch!

We are a family run ranch with strong belief in the power of tradition. Our goal is to do things right, stewarding what God has given us and raising our Black Angus cattle naturally, with transparency from pasture to plate.  Our herd of Black Angus cattle is raised responsibly on our open Georgia range of pastures. We believe in providing natural Black Angus ranch raised beef that is free from growth hormones and we are committed to following humane handling practices for our herd every step of the way, from calving to processing.
