Everywhere you look, it’s hard not to notice the excitement over Black Angus beef. And you may be wondering, what even is Black Angus? Is it a special cut? Is it really better beef? As a Georgia ranch that raises Black Angus cattle, Callidora Ranch is here to help.
First let’s talk about the history of Angus beef! Then we’ll touch on why it is such an excellent tasting and superior quality beef to others.
First, Angus beef is not actually a cut of meat! Rather, it refers to a breed of cattle. There are both Black Angus and Red Angus cattle, which originated from the county of Angus in Scotland. (They also originated in Aberdeenshire, a neighboring county— but this title is not nearly as popular). This cattle breed natively roamed around these counties of Aberdeenshire and Angus in as early as the sixteenth century! But it wasn’t till the early 1800s that a Scottish man named Hugh Watson began developing the Angus breed.
Naturally, before Watson developed the breed, early Angus cattle were varied in their colors, markings, and color patterns. Many (though not all) even had horns! When Watson began his development process, he favored the deep black color for his cattle and decided to breed his herd for the black color (among other strong attributes). In this way, the Black Angus breed was born!
After Watson’s efforts, the Black Angus began to grow in popularity (and with other breeders). Finally, the first Black Angus arrived in North America in 1873. They have since been further bred with Texas longhorn cows, creating offspring that are “polled” (hornless), jet black, much heavier, and well prepared for harsh hot and cold climates. Today Black Angus is one of the most popular breeds of cattle in the US!
So now the million dollar question… Why is Black Angus so special? And does it really taste better?
The answer is a resounding “YES!”. Black Angus tastes so much better, and is more tender than other kinds of beef. We think this is mostly due to the meat’s natural marbling. It’s a trait that Black Angus beef is known for, and sought after. If you’re not sure what this means, with marbled meat the animal fat is distributed thinly and evenly throughout, which leads to more juicy and flavorful food!
